Ingredients
- shrimp — 200 g, peeled and deveined
- firm tofu — 400 g (1 block), sliced 1.5 cm thick
- garlic — 3 cloves, minced
- scallions — 2 stalks, chopped
- soy sauce — 1 tbsp
- oyster sauce — 1 tbsp
- white pepper — 1/4 tsp
- cornstarch — 1 tsp mixed with 2 tbsp water
- cooking oil — 2 tbsp
Steps (beginner-friendly)
- Pat the tofu slices dry with paper towels.
- Heat 1.5 tbsp oil in a frying pan over medium heat. Pan-fry the tofu 3 minutes per side until golden. Leave it in the pan.
- Push the tofu aside, add the remaining 1/2 tbsp oil and the garlic, and stir 20 seconds until fragrant.
- Add the shrimp and cook 1-2 minutes, stirring, until they turn pink and opaque.
- Add 1 tbsp soy sauce, 1 tbsp oyster sauce, white pepper, and 1/3 cup water. Slide the pan gently (don't stir) to combine.
- Cover and simmer on medium heat for 3 minutes so the tofu absorbs the sauce.
- Re-stir the cornstarch slurry, pour it in, and swirl the pan for 30 seconds until the sauce turns glossy.
- Top with scallions and serve straight from the pan.
Tip: Slide the pan rather than stirring to keep tofu intact.
