Ingredients
- shrimp — 300 g, peeled and deveined
- garlic — 6 cloves, minced
- scallions — 2 stalks, chopped
- cooking wine — 1 tbsp
- cooking oil — 2 tbsp
- salt — 1/2 tsp
- white pepper — 1/4 tsp
Steps (beginner-friendly)
- Pat the shrimp dry with paper towels and season with salt and white pepper.
- Mince 6 cloves of garlic (don't skimp — this dish is all about garlic).
- Heat 2 tbsp oil in a wok over medium heat. Add the garlic and stir 20-30 seconds until it smells amazing and is just barely golden — watch closely so it doesn't burn.
- Turn to high heat, add the shrimp in one layer, and let them sit 30 seconds before stirring.
- Stir-fry 1-2 minutes total until every shrimp turns pink, curls into a C shape, and looks opaque — no gray translucent spots.
- Pour the cooking wine around the edge of the wok; it will sizzle loudly. Toss 10 seconds.
- Turn off the heat, toss in the scallions, and serve immediately.
Tip: Do not overcook shrimp — they turn rubbery quickly.
