Ingredients
- dried wheat noodles — 200 g
- shiitake or button mushrooms — 150 g, sliced
- baby bok choy — 150 g, halved
- soy sauce — 2 tbsp
- sesame oil — 1 tbsp
- garlic — 2 cloves, minced
- cooking oil — 1 tbsp
- salt — for noodle water
Steps (beginner-friendly)
- Boil the noodles in salted water according to package time (usually 4-5 minutes) until just tender with a slight chew.
- While they cook, heat the oil in a pan over medium-high heat and stir-fry the mushrooms 3 minutes until golden.
- Add garlic and stir 15 seconds until fragrant.
- Add bok choy and 2 tbsp of the noodle cooking water; cook 1-2 minutes until the greens are bright and wilted.
- Drain the noodles, reserving a splash of water.
- Toss the noodles into the pan with soy sauce and sesame oil; toss 1 minute until every strand is coated.
- Serve in a bowl, topped with extra scallions if you like.
Tip: Save some noodle water before draining; the starchy water helps the sauce cling to the noodles.
