Ingredients
- baby bok choy — 300 g (about 6 small)
- garlic — 4 cloves, minced
- cooking oil — 1.5 tbsp
- salt — 1/2 tsp
- oyster sauce — 1 tbsp (optional)
Steps (beginner-friendly)
- Rinse the bok choy under cold running water 3 times, then cut each one in half lengthwise.
- Peel and mince 4 garlic cloves (chop as finely as you can).
- Heat 1.5 tbsp oil in a wok over high heat until it shimmers, about 1 minute.
- Add the minced garlic and stir for 15-20 seconds until fragrant but NOT browned.
- Add the bok choy all at once and stir-fry on high heat for 2 minutes, tossing constantly.
- The bok choy is ready when the stems look bright green and slightly translucent but still crisp.
- Add 1/2 tsp salt (and 1 tbsp oyster sauce if using), toss for 20 more seconds, and plate immediately.
Tip: High heat and short cooking keep the greens crisp and bright green.
