Ingredients
- spinach — 300 g
- firm tofu — 250 g, cubed
- garlic — 3 cloves, minced
- soy sauce — 1 tbsp
- cooking oil — 1.5 tbsp
- salt — 1/4 tsp
- sesame oil — 1/2 tsp
Steps (beginner-friendly)
- Rinse the spinach well and blanch it in boiling water 30 seconds until just wilted, then drain and squeeze out excess water. Blanching removes bitterness.
- Heat the oil in a pan over medium-high heat and pan-fry the tofu cubes 3-4 minutes until golden on a couple of sides.
- Add garlic and stir 15 seconds until fragrant.
- Add the blanched spinach, breaking it up with your spatula.
- Add soy sauce and salt, toss 1 minute until heated through and mixed.
- Drizzle sesame oil and serve.
Tip: Blanching the spinach first keeps it bright green and prevents a watery, muddy dish.
